Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 10x15 inch jelly roll pan by lining it with parchment paper.
  2. Sift together the cake flour, baking powder, and salt in a mixing bowl.
  3. In another bowl, beat together the egg yolks, granulated sugar, maple syrup, ube extract, and water until thick and light.
  4. Beat the egg whites with cream of tartar until foamy, then gradually add sugar until stiff peaks form.
  5. Gently fold half of the meringue into the yolk mixture, then gradually add the sifted flour mixture, folding gently.
  6. Incorporate the canola oil and the remaining meringue, folding until just combined.
  7. Pour the batter into the prepared pan, spreading evenly and bake for 20-25 minutes.
  8. Let the cake cool in the pan for about 10 minutes, then turn it out onto a powdered sugar-dusted towel and roll it up.
  9. After cooling completely, unroll the cake and spread whipped cream cheese frosting over the surface.
  10. Re-roll the cake without the towel, seam-side down, and coat the top with remaining frosting.
  11. Chill the assembled cake in the refrigerator for at least 2 hours before slicing and serving.
