Step-by-Step Instructions
- Preheat your oven to 350°F (175°C) and prepare a 10x15 inch jelly roll pan by lining it with parchment paper.
- Sift together the cake flour, baking powder, and salt in a mixing bowl.
- In another bowl, beat together the egg yolks, granulated sugar, maple syrup, ube extract, and water until thick and light.
- Beat the egg whites with cream of tartar until foamy, then gradually add sugar until stiff peaks form.
- Gently fold half of the meringue into the yolk mixture, then gradually add the sifted flour mixture, folding gently.
- Incorporate the canola oil and the remaining meringue, folding until just combined.
- Pour the batter into the prepared pan, spreading evenly and bake for 20-25 minutes.
- Let the cake cool in the pan for about 10 minutes, then turn it out onto a powdered sugar-dusted towel and roll it up.
- After cooling completely, unroll the cake and spread whipped cream cheese frosting over the surface.
- Re-roll the cake without the towel, seam-side down, and coat the top with remaining frosting.
- Chill the assembled cake in the refrigerator for at least 2 hours before slicing and serving.
