Preparation
- Preheat your oven to 375°F (190°C). Slice the tops off the green cabbages, core the centers, and rub with olive oil or butter, sprinkling generously with salt and pepper.
- In a large skillet, warm olive oil or bacon fat over medium heat. Sauté onion, bell peppers, and garlic for 5–7 minutes until softened.
- Add smoked sausage and shrimp, cooking with Cajun seasoning, paprika, garlic powder, cayenne, salt, and pepper until shrimp are pink.
- Stuff each cabbage with the mixture, then sprinkle cheese if desired before packing.
- Bake covered with foil for 40–50 minutes, remove foil, and bake for another 10 minutes until tender.
- Cool slightly; garnish and serve sliced into wedges.
