  2. Combine sauce ingredients by whisking together the Golden Mountain sauce, white sugar, sesame oil, and oyster sauce until smooth. Set aside.
  3. Make the filling by mixing the ground pork with the sauce mixture, adding in the egg and cornstarch until smooth.
  4. Mix in vegetables and spices by adding the pounded coriander mix, carrots, green onions, and shiitake mushrooms to the filling, folding until incorporated.
  5. Shape the dumplings by placing a spoonful of filling on a wonton wrapper, moistening edges, and sealing tightly. Lay on a parchment-lined tray.
