- Preheat your oven to 275°F (135°C) and line a muffin tin with cupcake liners. Place a whole Oreo cookie at the base of each liner.
- Blend room-temperature cream cheese until smooth, then gradually add granulated sugar. Mix in the beaten eggs and vanilla extract without overmixing. Fold in sour cream and salt.
- Spoon the mixture evenly into the muffin cups, covering the Oreo bases. Sprinkle chopped Oreos on top. Bake for 20-23 minutes, until edges are set and centers jiggle slightly.
- Let the cheesecake bites cool on a wire rack for about 30 minutes. Then, refrigerate for at least 2 hours.
- Carefully peel off cupcake liners, arrange on a platter, and top with whipped cream and extra chopped Oreos before serving.
