Preparation Steps
  1. Preheat your oven to 275°F (135°C) and line a muffin tin with cupcake liners. Place a whole Oreo cookie at the base of each liner.
  2. Blend room-temperature cream cheese until smooth, then gradually add granulated sugar. Mix in the beaten eggs and vanilla extract without overmixing. Fold in sour cream and salt.
  3. Spoon the mixture evenly into the muffin cups, covering the Oreo bases. Sprinkle chopped Oreos on top. Bake for 20-23 minutes, until edges are set and centers jiggle slightly.
  4. Let the cheesecake bites cool on a wire rack for about 30 minutes. Then, refrigerate for at least 2 hours.
  5. Carefully peel off cupcake liners, arrange on a platter, and top with whipped cream and extra chopped Oreos before serving.
