Preparation Steps
  1. In a medium-sized bowl, whisk together the sour cream, mayonnaise, cotija cheese, lime zest, lime juice, elote seasoning, and minced garlic until smooth.
  2. Slice the mini cucumbers into thin rounds and set aside. Prepare thawed corn, minced cilantro, and finely chopped red onion.
  3. Add the cucumbers, corn, cilantro, and red onion to the bowl with the dressing. Gently fold to combine.
