Preparation Steps
- Boil a large pot of water. Add 8 ounces of rice noodles and cook for 5-7 minutes until tender. Drain and rinse under cold water. Set aside in a large mixing bowl.
- Julienne 1-2 medium carrots and slice 1 seedless cucumber into thin rounds. Add fresh mint and cilantro to the bowl with the noodles.
- In a small bowl, whisk together 3 tablespoons of lime juice, 2 tablespoons of fish sauce (or soy sauce), and 1 or 2 minced garlic cloves. Add chopped chili if desired.
- Drizzle the dressing over the noodle and vegetable mixture. Toss gently to ensure everything is well coated.
- Serve immediately or cover and refrigerate for about 30 minutes for enhanced flavor.
