Method
 

Preparation Steps
  1. Boil a large pot of water. Add 8 ounces of rice noodles and cook for 5-7 minutes until tender. Drain and rinse under cold water. Set aside in a large mixing bowl.
  2. Julienne 1-2 medium carrots and slice 1 seedless cucumber into thin rounds. Add fresh mint and cilantro to the bowl with the noodles.
  3. In a small bowl, whisk together 3 tablespoons of lime juice, 2 tablespoons of fish sauce (or soy sauce), and 1 or 2 minced garlic cloves. Add chopped chili if desired.
  4. Drizzle the dressing over the noodle and vegetable mixture. Toss gently to ensure everything is well coated.
  5. Serve immediately or cover and refrigerate for about 30 minutes for enhanced flavor.
