Ingredients

For the Filling
  • 1 pound ground beef Substitute with plant-based crumbles for a vegetarian version
  • 1 packet taco seasoning Opt for low-sodium to control spice levels
  • 4 cups chopped green cabbage Using bagged coleslaw mix can save time
  • 1 cup diced tomatoes Both fresh and canned options work
  • 1 cup canned black beans Rinse and drain well before use
  • 1 cup canned sweet corn Swap with fresh corn in summer
For the Toppings
  • 2 cups Fritos corn chips Try different corn chip varieties for a twist
  • 1.5 cups shredded cheddar cheese Look for dairy-free alternatives for a vegan version
  • 0.5 cup ranch dressing or Southwest-style dressing Adjust to suit your preference for creaminess or spice

Equipment

  • Large Skillet
  • Mixing bowl
  • Spatula

Method

Step-by-Step Instructions
  1. In a large skillet, heat over medium-high heat, then add the pound of ground beef, breaking it up with a spatula. Sauté for about 5-7 minutes until browned. Drain excess fat and set aside.
  2. Sprinkle taco seasoning over the browned beef and pour in a splash of water. Stir and let it simmer for 2-3 minutes on medium-low.
  3. Chop 4 cups of green cabbage, dice 1 cup of tomatoes, rinse and drain 1 cup of black beans and 1 cup of sweet corn. Set aside.
  4. In a large mixing bowl, layer cabbage, seasoned ground beef, black beans, corn, and diced tomatoes. Gently toss together.
  5. Add Fritos corn chips on top, followed by shredded cheddar cheese. Allows flavors and textures to combine.
  6. Drizzle ranch dressing over the assembled dish right before serving. Toss lightly if desired.
