Method
 

Step-by-Step Instructions
  1. Wash 2-3 medium sweet potatoes under cool water. Peel them and cut into 1-inch cubes.
  2. Combine 3-4 cloves of minced garlic, ½ cup of grated Parmesan cheese, 1 teaspoon of dried Italian seasoning, and salt and black pepper to taste in a bowl.
  3. Drizzle 2 tablespoons of olive oil over the sweet potatoes. Toss to coat, then add the garlic-Parmesan mixture.
  4. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  5. Spread sweet potatoes in a single layer on the baking sheet and roast for 20-25 minutes. Flip halfway through.
  6. Transfer to a serving bowl and drizzle with melted butter if desired. Garnish with parsley.
