  • 1 pound boneless, skinless chicken breast or tofu for a vegetarian option
  • 4 cups chicken broth preferably low-sodium
  • 2 cups water

  • 3 tablespoons fresh ginger or ground ginger as an alternative
  • 3 cloves garlic minced; garlic powder can be used
  • 1 onion any variety is suitable
For the Vegetables
  • 2 carrots sliced
  • 1 bell pepper diced
  • 3 cups bok choy or spinach fresh
For the Noodles
  • 4 cups egg noodles or rice noodles rice noodles for gluten-free
For Garnish
  • 1 bunch green onions sliced
  • salt and pepper to taste

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of vegetable oil in a large pot over medium heat for about 2 minutes.
  2. Add 1 pound of sliced boneless, skinless chicken breast, seasoning with salt and pepper. Cook for 5 to 7 minutes until golden brown.
  3. Add 1 sliced onion, 3 minced garlic cloves, and 3 tablespoons of grated ginger. Stir for 2 to 3 minutes until translucent.
  4. Pour in 4 cups of chicken broth and 2 cups of water, stirring well. Increase heat to bring to a boil.
  5. Once boiling, add 2 sliced carrots and 1 diced bell pepper. Simmer for 5 minutes until softened.
  6. Stir in 4 cups of egg noodles or rice noodles and cook according to package instructions.
  7. Two minutes before noodles are done, add 3 cups of chopped bok choy or spinach and stir to wilt.
  8. Taste and adjust seasoning with salt and pepper before serving.
  9. Serve hot, garnished with sliced green onions.
