Ingredients

For the Cookie Dough
  • 2 cups All-purpose flour Substitute whole wheat flour for a heartier texture.
  • 1 teaspoon Ground ginger You can use ground cinnamon for a milder flavor.
  • 1 teaspoon Ground cinnamon This is key for flavor, so no substitutions needed.
  • 1 teaspoon Baking soda Ensure it's fresh for the best results.
  • ¾ cup Molasses You can substitute with dark corn syrup if needed.
  • ¾ cup Brown sugar Feel free to use light brown sugar interchangeably.
  • 1 large Egg A flax egg can substitute if you prefer a vegan option.
For the Cranberry Filling
  • 1 cup Cranberry jam Raspberry jam can work well too.

Equipment

  • Mixing bowl
  • Baking Sheet
  • Parchment Paper
  • Whisk

Method

Preparation Instructions
  1. In a large mixing bowl, whisk together flour, baking soda, ground ginger, and ground cinnamon until well combined.
  2. In another bowl, cream together molasses and brown sugar until the mixture is smooth. Beat in egg, then gradually mix in the dry ingredients, forming a soft dough.
  3. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  4. Preheat the oven to 350°F (175°C). After chilling, remove the dough and divide it into 1 tablespoon portions, rolling each into a smooth ball.
  5. Place the dough balls on a baking sheet lined with parchment paper, spacing them 2 inches apart, and press a thumbprint into each.
  6. Spoon a teaspoon of cranberry jam into each indentation. Bake for 10-12 minutes until edges are golden.
  7. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
