  • 4 cups cubed stale white bread can substitute with brioche or challah
  • 2 large eggs beaten
  • 2 cups milk whole or almond/oat milk
  • ¼ cup butter melted
  • ¼ cup sugar can use brown sugar for more flavor
  • ¼ cup raisins or other dried fruits
  • 1 tablespoon vanilla extract use pure for best results
  • ¼ teaspoon ground nutmeg can substitute with cinnamon
For the Caramel Sauce
  • ½ cup butter for sauce
  • ½ cup sugar
  • ½ cup packed brown sugar dark brown will intensify flavor
  • ½ cup heavy whipping cream can replace with non-dairy option

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C). Prepare your mixing bowls and greased casserole dish.
  2. In a large bowl, combine cubed stale bread and raisins. Warm milk and butter in a saucepan until butter melts, then pour over bread. Let it soak for 10 minutes.
  3. Add sugar, eggs, vanilla extract, and ground nutmeg to the soaked mixture. Mix thoroughly until well combined.
  4. Pour the mixture into a greased casserole dish. Bake for 40-50 minutes until the center is set and a toothpick comes out clean.
  5. For the caramel sauce, combine butter, sugar, and brown sugar in a saucepan. Heat until thickened, then stir in heavy cream and vanilla extract.
  6. Cut the pudding into portions, drizzle with warm caramel sauce, and serve.
