Ingredients
  

For the Chicken Marinade
  • 1 pound chicken breasts can substitute with turkey or tofu
  • 1/4 cup olive oil or avocado oil
  • 3 tablespoons lemon juice fresh squeezed is best
  • 3 cloves minced garlic garlic powder can be used
  • 2 teaspoons dried oregano can use Italian seasoning
  • 1 teaspoon ground cumin coriander also works
  • 1 teaspoon paprika smoked paprika for a twist
  • 1/2 teaspoon ground cinnamon nutmeg can substitute
  • to taste salt & pepper adjust as needed
For Assembling
  • 4 pieces pita bread can use whole wheat or gluten-free
  • 1 cup tzatziki sauce or sour cream as a quick substitute
  • 1 small sliced red onion green onions can provide milder flavor
  • 1 medium cucumber zucchini can be used if needed
  • 1 medium tomato or roasted bell peppers when out of season
  • to taste fresh parsley optional, can use mint for refreshing flavor

Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, ground cumin, paprika, ground cinnamon, salt and pepper to create the marinade.
  2. Slice chicken breasts into thin strips and place in a resealable bag or bowl. Pour the marinade over the chicken, seal, and refrigerate for at least 1 hour.
  3. Heat a large skillet over medium-high heat. Add marinated chicken pieces and cook for 5–7 minutes on each side until golden-brown and cooked through.
  4. Warm pita bread in the skillet or wrap in foil and heat in a preheated oven at 350°F for 5-10 minutes.
  5. Spread tzatziki sauce on warm pita, layer cooked chicken and toppings like sliced red onion, cucumber, and tomato.
  6. Roll the pita tightly around the filling, cut in half if desired, and serve immediately.

Notes
