  • 1 pound Steak flank, ribeye, or New York strip recommended
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
For the Zucchini
  • 2 medium Zucchini or bell peppers/asparagus
  • 2 tablespoons Olive Oil
For the Creamy Herb Sauce
  • 1 cup Sour Cream or Greek Yogurt or plant-based yogurt
  • 1 tablespoon Dijon Mustard
  • 2 tablespoons Fresh Herbs (Chives or Parsley)
For the Base
  • 2 cups Cooked Rice or Mashed Potatoes jasmine rice recommended

Method
 

Preparation Steps
  1. Pat the steak dry and season with salt, pepper, garlic powder, and onion powder. Let rest for 15-20 minutes.
  2. Whisk together sour cream, Dijon mustard, fresh herbs, garlic powder, salt, and pepper for the sauce. Chill for at least 10 minutes.
  3. Slice zucchini into planks, toss with olive oil, salt, and pepper. Grill for 2-3 minutes on each side.
  4. Preheat grill pan, add oil, and sear the seasoned steak for 3-4 minutes on each side until medium-rare. Let it rest for 5-10 minutes.
  5. Layer rice or mashed potatoes in a bowl, top with grilled zucchini and sliced steak, and drizzle sauce over the top.
