- Preheat your grill to medium-high heat, approximately 400–450°F.
- Place the husked corn directly on the grates and grill for 10-12 minutes, turning every few minutes.
- Cool the corn briefly before cutting the kernels off the cob into a bowl. Add in mayonnaise, sour cream, cilantro, cotija cheese, and lime juice, mixing until well combined.
- Season the ribeye steaks with salt and pepper, then grill for 4-5 minutes per side for medium-rare doneness.
- While the steak rests, toast your tortillas on the grill for about 1 minute on each side.
- Assemble tacos by placing slices of grilled steak onto each tortilla and top with the elote mixture.
- Optionally, finely slice a jalapeño and sprinkle on top of each taco for added spice.
- Serve your tacos immediately, accompanied by extra lime wedges for squeezing.
