- In a large skillet over medium heat, brown the ground beef for about 5-7 minutes, breaking it apart with a spatula. Stir in tomato paste and season with salt and pepper, cooking for another 2 minutes.
- Lay one tortilla flat and sprinkle half with shredded sharp cheddar cheese and a scoop of the ground beef filling. Add Monterey Jack cheese, fold the tortilla over, and press gently.
- Heat a skillet over medium-low heat. Cook the folded quesadilla for 2-3 minutes until golden brown, then flip and cook the other side for another 2-3 minutes.
