Preparation Steps
  1. Begin by heating 1 tablespoon of olive oil in a large cast-iron skillet over medium-high heat for about 1-2 minutes.
  2. Add 1 pound of ground turkey to the skillet. Cook for 6-8 minutes, stirring occasionally, until browned.
  3. Stir in 2 tablespoons of taco seasoning, along with salt and pepper, and mix thoroughly.
  4. Pour in 1 can of undrained diced tomatoes, 1 cup of rinsed black beans, and 1 cup of sweet corn. Stir well and let simmer for 5-7 minutes.
  5. Reduce heat to low and sprinkle 1 cup of shredded cheese over the mixture. Cover and cook for 2-3 minutes until melted.
  6. Remove from heat and garnish with freshly chopped cilantro, diced jalapenos, and a dollop of sour cream. Serve immediately.
