Step-by-Step Instructions
  1. In a large pot, heat a tablespoon of olive oil over medium heat. Add one diced onion and two minced garlic cloves, sautéing for about 4-5 minutes until they become translucent and fragrant.
  2. Once the aromatics are ready, add 14 ounces of sliced beef smoked sausage to the pot. Cook for approximately 5-7 minutes, stirring frequently, until the sausage is nicely browned on the edges.
  3. Next, add 2 cups of chopped carrots, 2 cups of butternut squash, and 2 cups of chopped kale into the pot. Stir well to combine, allowing them to cook together for about 3-4 minutes.
  4. Pour in 4 cups of chicken or vegetable broth, sprinkle in your dried herbs, and stir everything together. Bring the mixture to a gentle simmer over medium heat.
