Ingredients
  

For the Chicken
  • 2 pounds boneless skinless chicken thighs Chicken breasts can be substituted but may dry out.
For the Marinade
  • 1 cup pineapple juice Fresh or canned varieties work well.
  • 1/2 cup soy sauce Low-sodium is recommended.
  • 1/4 cup brown sugar Essential for caramelization.
  • 2 tablespoons honey Enhances the glaze.
  • 2 tablespoons rice vinegar or apple cider vinegar For mild tang.
  • 1 tablespoon sesame oil Adds nutty richness.
  • 2 cloves garlic Minced for flavor.
  • 1 tablespoon fresh ginger Grated for added warmth.
  • to taste crushed red pepper flakes Optional for heat.
For Thickening the Sauce (Optional)
  • 1 tablespoon cornstarch Use to thicken sauce.
For Garnish
  • to taste green onions Thinly sliced.
  • to taste sesame seeds For texture.
  • to taste pineapple slices or chunks Optional.

Method
 

Directions
  1. Prepare the Marinade by whisking together pineapple juice, soy sauce, brown sugar, honey, rice vinegar, sesame oil, garlic, ginger, and crushed red pepper flakes in a medium bowl.
  2. Marinate the Chicken by placing chicken thighs in a large resealable bag and pouring half of the marinade over it. Seal and refrigerate for at least 2 hours, preferably overnight.
  3. Cook the Chicken on a preheated grill or skillet until cooked through, about 5-7 minutes per side on the grill or 6-8 minutes in the skillet.
  4. Make the Sauce by boiling the reserved marinade in a saucepan, then simmer to thicken. If desired, add a cornstarch slurry.
  5. Serve and Garnish by slicing the chicken, drenching it in sauce, and garnishing with green onions and sesame seeds.

Notes
