Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) for optimal roasting.
  2. Wash baby potatoes and slice them in half or quarters for even cooking. Place in a mixing bowl.
  3. Add halved cherry tomatoes, minced garlic, olive oil, oregano, black pepper, and salt to the bowl. Toss to coat.
  4. Transfer the mixture to a baking dish, placing the block of feta in the center. Drizzle more olive oil on the feta.
  5. Roast in the oven for 35-40 minutes, stirring halfway through until potatoes are golden and tender.
  6. Remove from the oven and stir the melted feta into the potatoes and tomatoes. Garnish with herbs and serve warm.
