Step-by-Step Instructions
  1. In a large pot, pour 2 tablespoons of olive oil and heat it over medium heat until shimmering but not smoking, about 1-2 minutes.
  2. Add 1 chopped yellow onion and 1 minced head of garlic to the pot, stirring frequently for about 5 minutes.
  3. Sprinkle in 1 teaspoon of ground cumin and cook for an additional minute, stirring often.
  4. Carefully pour in 6 cups of chicken or vegetable broth, stirring to combine all the ingredients.
  5. Decrease the heat and let the soup simmer uncovered for 20 minutes.
  6. Just before serving, stir in the juice of 1 lime and 1/4 cup of freshly chopped cilantro.
