  • 2-4 tablespoons Olive Oil
  • 1 tablespoon Italian Seasoning Store-bought or homemade blends can be used.
For the Creaminess
  • 1 cup Feta Cheese Cream cheese can be used for a milder flavor.
  • 1 cup Heavy Cream Use plant-based cream for a dairy-free option.
To Finish the Sauce
  • 0.25-0.5 cup Pasta Water Reserve from cooking pasta.

Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C) and prepare a baking sheet with olive oil.
  2. Chop tomatoes, mushrooms, bell pepper, onion, and zucchini into uniform chunks and trim the garlic head. Toss with olive oil and Italian seasoning, then spread on the baking sheet.
  3. Roast the vegetables for 30-40 minutes until tender with golden edges, checking occasionally.
  4. Cook your choice of pasta according to package instructions, reserving ¼ to ½ cup of pasta water before draining.
  5. Transfer roasted veggies to a blender, squeezing in roasted garlic. Add feta and heavy cream, blending until smooth, adjusting with reserved pasta water as necessary.
  6. Combine cooked pasta with the blended sauce in a large mixing bowl, ensuring pasta is fully coated. Serve warm.
