Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin with liners or non-stick spray.
  2. In a mixing bowl, blend cottage cheese, eggs, honey or maple syrup, vanilla extract, and melted coconut oil until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually mix the dry ingredients into the wet ingredients, folding gently until just combined.
  5. Fold in the blueberries gently without thawing if using frozen.
  6. Spoon the batter into the muffin tin, filling each cup to about 3/4 full.
  7. Bake for 20 to 25 minutes until golden brown and a toothpick comes out clean.
  8. Allow to cool in the pan for 5 minutes before transferring to a wire rack.
