- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 diced yellow onion and sauté for about 5-7 minutes until it becomes translucent and soft. Stir in 2 minced garlic cloves and cook for an additional minute.
- Add 4 cups of diced fresh peaches, 1/2 cup of apple cider vinegar, 1/3 cup of light brown sugar, 1/4 cup of Worcestershire sauce, 2 tablespoons of Dijon mustard, 1 tablespoon of smoked paprika, 1 teaspoon of chili powder, and a pinch of cayenne pepper. Stir well and bring to a simmer. Cook for 20-25 minutes.
- Remove the skillet from heat and use an immersion blender to purée the sauce until smooth. Return to low heat and stir in water or peach nectar as needed. Simmer for an additional 5 minutes.
- Taste and adjust seasoning with salt and freshly ground black pepper. Let the sauce cool before transferring to an airtight container.
