Step-by-Step Instructions
  1. Prepare Watermelon Juice: Blend chunked watermelon in a blender for 1-2 minutes, then strain through a fine mesh sieve to yield 2 cups of juice.
  2. Bloom Gelatin: In a bowl, combine half of the watermelon juice and sprinkle gelatin over it. Let sit for 5-10 minutes.
  3. Heat Remaining Juice: Warm the other half of the watermelon juice in a saucepan over low heat for 3-5 minutes.
  4. Combine Gelatin and Juice: Add bloomed gelatin mixture to warm juice, whisk until smooth for about 2-3 minutes.
  5. Finish Mixture: Stir in fresh lemon juice and honey until well combined. Allow to cool slightly.
  6. Mold the Gummies: Pour the mixture into gummy molds and refrigerate for at least 2 hours.
  7. Cut and Serve: Remove from molds or cut into shapes once set. Enjoy or store in an airtight container.
