For the Pesto Sauce
  • 1 cup pesto Homemade or store-bought
  • 1 cup fresh spinach Can use thawed frozen spinach
  • 2 tablespoons lemon juice Freshly squeezed for best flavor
  • 1/2 cup mayonnaise Can substitute with Greek yogurt
  • 2 garlic cloves Fresh is recommended
  • 1/4 cup fresh basil Chopped
For the Add-ins
  • 1/2 cup grated Parmesan cheese Use freshly grated for superior flavor
  • 1/4 cup pine nuts Use raw for best taste
  • 1/4 cup walnuts Use raw for best taste
  • 1 cup peas Thawed frozen
  • 2 tablespoons olive oil For binding the pesto

Method
 

Cooking Instructions
  1. Boil salted water in a large pot. Add pasta and cook for 10-12 minutes until al dente. Drain and cool.
  2. In a food processor, combine spinach, pesto, lemon juice, and mayonnaise. Pulse until smooth, adding olive oil if needed.
  3. In a large bowl, combine pasta, pesto sauce, Parmesan cheese, peas, and basil. Season with salt and pepper.
  4. Cover and chill in the refrigerator for at least 30 minutes before serving.
