  • 1 package Hash Browns frozen and slightly thawed
  • 3 cups Chicken cooked, chopped rotisserie chicken
  • 1 cup Bacon Bits
  • 1 cup Cheddar Cheese shredded
  • 1 can Cream of Chicken Soup
  • 1/2 cup Milk
  • 2 cups Mixed Vegetables frozen peas, carrots, and corn
  • 1 teaspoon Dried Thyme
For the Topping
  • 1 cup Ritz Crackers crushed
  • 1/2 cup Additional Cheddar Cheese shredded

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine hash browns, cooked chicken, bacon bits, 1 cup of cheddar cheese, mixed vegetables, cream of chicken soup, milk, and dried thyme. Mix until well incorporated.
  3. Lightly grease a 7x11-inch baking dish and spread the mixture evenly into the dish.
  4. In a small bowl, mix crushed Ritz crackers with remaining ½ cup of cheddar cheese and sprinkle over the casserole.
  5. Cover with aluminum foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 15 minutes, until the topping is golden brown.
  7. Let rest for 10-15 minutes before serving.
