Step-by-Step Instructions
  1. Preheat your oven to 300°F (149°C) and season the chuck roast with salt and pepper.
  2. Heat olive oil in the Dutch oven and sear the roast for about 5-7 minutes per side until golden-brown.
  3. Cook diced onions and celery in the pot for 8-10 minutes, then add garlic, tomato paste, and Worcestershire sauce.
  4. Pour in chicken stock, deglaze the pot, then return the seared roast and cover, braising for 2 hours.
  5. After 2 hours, add halved potatoes and diced carrots, cover, and return to the oven for 1 to 1.5 hours.
  6. Remove roast and vegetables, skim fat, mix cornstarch with cold water, thicken the gravy, and adjust seasoning.
  7. Slice or shred the pot roast, serve with gravy, and garnish with chopped parsley if desired.
