- Melt 3 tablespoons of butter in a small saucepan over medium-low heat. Add ⅛ teaspoon of red pepper flakes and stir gently for about 5 minutes.
- Carefully transfer the infused butter to a small bowl and set aside to cool.
- Brush one side of each slice of bread with the infused butter.
- Heat the saucepan again and place one slice of bread, buttered-side down, in the pan.
- Layer 2 oz of crumbled goat cheese and 2 oz of shredded white cheddar on the bread, then drizzle with 1 tablespoon of honey.
- Top with the second slice of bread, buttered-side out, and press down gently.
- Cook for 5-7 minutes, flipping when golden brown.
- Remove the sandwich when both sides are golden and drizzle with remaining honey, sprinkle with red pepper flakes.
- Slice in half and serve warm.
