  • 8 oz Tofu firm for better texture
For the Vegetables
  • 1 cup Bell Peppers different colors recommended
  • 1 cup Carrots sliced into thin matchsticks
  • 2 cups Spinach toss in just before serving
For Flavoring
  • 3 tbsp Soy Sauce or tamari for gluten-free
  • 1 tbsp Sesame Oil
For Garnishing
  • 2 tbsp Green Onions chopped

Method
 

Step‑by‑Step Instructions for Japchae
  1. Soak sweet potato glass noodles in hot water for about 30 minutes until chewy. Drain and rinse under cold water.
  2. Heat oil in a skillet. Add sliced beef and stir-fry for 3-4 minutes until browned. Remove and set aside.
  3. In the same skillet, stir-fry chopped vegetables for 3-5 minutes. Add spinach towards the end.
  4. Return beef to skillet, add noodles, soy sauce, and sesame oil. Toss for 2-3 minutes until well-combined.
  5. Cook for another minute, stir constantly to meld flavors, then add green onions for garnish.
