Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 12-cup mini muffin tin.
  2. In a skillet over medium heat, cook the bacon until crispy, about 8 to 10 minutes. Drain and chop.
  3. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract.
  5. Gently combine wet and dry ingredients, avoiding overmixing.
  6. Fold in half of the chopped bacon.
  7. Fill the muffin tin with batter and top with remaining bacon.
  8. Bake for 15–18 minutes until golden and cooked through.
  9. Allow to cool for about 5 minutes, then drizzle with maple syrup before serving.
