Ingredients
  

For the Meatballs
  • 500 g Beef Mince Can be substituted with more pork
  • 500 g Pork Mince Adds tenderness and moisture
  • 1 medium Red Onion Grated for better texture
  • 100 g Plain Corn Chips Ground to replace breadcrumbs
  • 1 large Egg Binds the ingredients
  • 1 small Fresh Jalapeño Reduce or omit for less spiciness
  • 1 bunch Coriander/Cilantro Can use chives or parsley
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chipotle Powder Swap with smoked paprika for milder
  • 1 teaspoon Garlic Powder Fresh garlic is a substitute
  • 1 teaspoon Paprika Choose hot or sweet as preferred
For the Sauce
  • 400 g Crushed Tomatoes Base for rich sauce
  • 1 can Chipotle in Adobo Key for smoky heat
  • 2 tablespoons Olive Oil Essential for sautéing
  • 1 teaspoon Sugar Balances acidity

Method
 

Preparation
  1. Preheat your oven to 220°C (390°F). Prepare a rack over a baking tray and spray it lightly with oil.
  2. Blitz the corn chips in a food processor until they reach a fine consistency.
  3. In a large mixing bowl, combine beef and pork mince, grated red onion, crushed corn chips, egg, cilantro, jalapeño, and spices.
  4. Roll the mixture into balls, aiming for 20-24 meatballs about 3-3.5 cm in size.
  5. Bake the meatballs in the preheated oven for 10 minutes.
  6. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for a minute, then stir in chipotle and adobo sauce.
  7. Pour in crushed tomatoes and sugar, stirring well. Simmer for about 5 minutes.
  8. Transfer baked meatballs into the skillet with simmering sauce and simmer for an additional 10 minutes.
  9. Remove from heat and sprinkle with freshly chopped cilantro before serving.

Notes

These meatballs can be served over rice or in tortillas. Adjust the spice level by changing the amount of chipotle powder or jalapeño.
