Preparation
- Preheat your oven to 220°C (390°F). Prepare a rack over a baking tray and spray it lightly with oil.
- Blitz the corn chips in a food processor until they reach a fine consistency.
- In a large mixing bowl, combine beef and pork mince, grated red onion, crushed corn chips, egg, cilantro, jalapeño, and spices.
- Roll the mixture into balls, aiming for 20-24 meatballs about 3-3.5 cm in size.
- Bake the meatballs in the preheated oven for 10 minutes.
- Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for a minute, then stir in chipotle and adobo sauce.
- Pour in crushed tomatoes and sugar, stirring well. Simmer for about 5 minutes.
- Transfer baked meatballs into the skillet with simmering sauce and simmer for an additional 10 minutes.
- Remove from heat and sprinkle with freshly chopped cilantro before serving.
