For the Topping
  • 1 large Egg For wash.
For Dusting
  • 1 tablespoon Flour To prevent sticking.

Preparation Steps
  1. Defrost the puff pastry in the refrigerator for 30-60 minutes until fully thawed but chilled.
  2. Sprinkle flour on a clean surface and roll out the pastry into a square.
  3. In a bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
  4. Whisk the egg with cold water and salt for the egg wash.
  5. Cut the pastry into nine squares, each measuring about 3.5 inches.
  6. Place cream cheese filling and raspberries on each square, fold, and seal with egg wash.
  7. Chill assembled pastries in the freezer for 30 minutes.
  8. Preheat oven to 400°F (200°C), brush pastries with egg wash, and bake for 25-30 minutes.
  9. Cool for 5 minutes and dust with powdered sugar before serving.
