  • 2 tablespoons Olive Oil or vegetable/avocado oil
  • 1 tablespoon Butter can use non-dairy alternative

  • 2 tablespoons Creole Seasoning Blend or Cajun seasoning

  • 2 tablespoons Tomato Paste or adjust with tomato sauce
  • 2 tablespoons Fresh Parsley for garnish; can use cilantro
For the Veggies
  • 1 cup Bell Peppers chopped, any color
  • 1 medium Onions diced, can substitute with shallots or green onions
  • 1 cup Ripe Tomatoes diced, optional
  • to taste Cayenne Pepper

Method
 

Step-by-Step Instructions
  1. In a small bowl, combine Creole seasoning, smoked paprika, salt, and black pepper. Mix thoroughly.
  2. Rinse red snapper fillets and pat dry. Season both sides with spice mix.
  3. Heat olive oil in a large sauté pan over medium-high heat. Add seasoned red snapper and cook for about 3 minutes on each side until golden.
  4. Transfer fillets to a greased baking pan and bake at 350°F for about 15 minutes until internal temperature reaches 130°F.
  5. In the same sauté pan, melt butter over medium heat, add onions and bell peppers. Sauté for about 5 minutes.
  6. Stir in tomatoes, tomato paste, and heavy cream. Simmer for another 5 minutes, adjusting thickness with chicken broth as needed.
  7. Pour the sauce over the baked red snapper fillets and garnish with parsley. Serve immediately.
