  • 1 cup red bell pepper diced
  • 1 medium jalapeño optional
  • 1 medium red onion diced
  • 2 cloves garlic minced
  • 1 cup corn kernels fresh or frozen
  • 1 cup black beans rinsed
  • 1/2 cup cotija cheese or feta cheese
  • 1/2 cup sour cream or Greek yogurt
  • 1 tbsp honey optional
  • 1/4 cup fresh cilantro chopped
For the Sauce
  • 2 tbsp water for sauce consistency

Step-by-Step Instructions
  1. Marinate Chicken: Pat chicken dry, dice into pieces, and marinate with olive oil, lime juice, spices, and chipotle pepper for at least 15 minutes.
