- Thaw puff pastry at room temperature for 30-60 minutes or overnight in the fridge.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, beat cream cheese, white sugar, and vanilla until smooth. Add red food coloring and fold in half of the diced strawberries.
- Roll out the puff pastry until 1/8-inch thick. Cut into heart shapes and score a small rim around the edges.
- Fill each heart-shaped pastry with cream cheese filling and top with remaining strawberries. Brush edges with egg wash.
