Preparation
- Prepare your ingredients by washing and dicing the tomatoes, chopping the green onions, and mashing the hard-boiled eggs.
- In a bowl, mix the mashed eggs with diced tomatoes, chopped green onions, and mayonnaise. Season with salt and pepper to taste.
- Spread butter on one side of each slice of bread, then lay out the slices buttered side up.
- Scoop the filling onto the buttered side of one slice, press another slice down on top to make a sandwich.
- Trim the crusts if desired, cut each sandwich into four triangles, and serve with chips or fruit.
