  • 8 slices White Sandwich Bread
  • 4 tablespoons Butter Optional
For the Filling
  • 6 large Hard Boiled Eggs Fully cooked and cooled
  • 2 medium Roma Tomato Remove seeds and pulp
  • 3 stalks Green Onions (Scallions) Use white part only
For the Crunch
  • 1 cup Butter Lettuce Can substitute with Romaine
For Binding
  • 1/4 cup Mayonnaise Can substitute with salad cream
Seasoning
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Pepper Adjust to taste

Method
 

Preparation
  1. Prepare your ingredients by washing and dicing the tomatoes, chopping the green onions, and mashing the hard-boiled eggs.
  2. In a bowl, mix the mashed eggs with diced tomatoes, chopped green onions, and mayonnaise. Season with salt and pepper to taste.
  3. Spread butter on one side of each slice of bread, then lay out the slices buttered side up.
  4. Scoop the filling onto the buttered side of one slice, press another slice down on top to make a sandwich.
  5. Trim the crusts if desired, cut each sandwich into four triangles, and serve with chips or fruit.
