Ingredients
  

For the Crust
  • 20 cookies Oreo-Style Cookies Swap with gluten-free cookies if needed.
  • 1/4 cup Vegan Butter Coconut oil can be used as an alternative.
For the Filling
  • 8 oz Vegan Dark Chocolate (70%) Ensure it's labeled vegan.
  • 1 cup Soft Silken Tofu No perfect substitutes.
  • 1/2 cup Vegan Greek-Style Yogurt Thick coconut yogurt can be used.
  • 1/2 cup Unsweetened Cocoa Powder Raw cacao can be used for deeper taste.
  • 1/4 cup Pure Maple Syrup Agave syrup is a substitute.
  • 1 teaspoon Pure Vanilla Extract Vanilla bean paste makes a lovely swap.
  • 1/4 teaspoon Sea Salt Enhances sweetness, can be omitted.
For Toppings
  • 1 cup Fresh Berries (optional) Any seasonal berries are great.

Method
 

Preparation Steps
  1. Line the bottom and sides of a springform pan with parchment paper.
  2. In a food processor, blend the Oreo-style cookies and vegan butter until resembling wet sand.
  3. Press the cookie mixture into the bottom of the prepared pan and chill.
  4. Melt the vegan dark chocolate over a bain-marie until smooth.
  5. In a high-speed blender, combine silken tofu, yogurt, cocoa powder, maple syrup, vanilla, and sea salt. Blend until creamy.
  6. Pour melted chocolate into the blender and blend until mixed.
  7. Pour the filling over the chilled crust and level it nicely.
  8. Cover with plastic wrap and refrigerate for at least 4 hours to set.
  9. Carefully remove the cake from the springform pan and add fresh berries before serving.
