  • 1 cup unsalted butter cold, cubed
  • 1 large egg for brushing
  • 2 tablespoons coarse sugar for topping, optional
For the Filling
  • 4 medium fresh peaches sliced; can use canned or frozen
  • 1/2 cup granulated sugar adjust sweetness to taste
  • 2 tablespoons cornstarch for thickening
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon optional
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Whisk together flour and salt. Cut in butter until coarse crumbs form. Gradually add ice water until dough holds together. Chill for 30 minutes.
  2. Slice peaches and mix with sugar, cornstarch, lemon juice, and vanilla in a bowl. Set aside.
  3. Preheat oven to 400°F (200°C). Prepare a lined baking sheet for the tart.
  4. Roll out the chilled dough into a 12-inch circle and transfer to the baking sheet.
  5. Spoon peach mixture into the center of the dough, fold edges, brush with egg, and sprinkle sugar if desired.
  6. Bake for 35-40 minutes until golden brown and juices are bubbling.
  7. Cool for 15 minutes before serving, optionally with ice cream.
