Preparation Steps
  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.

  3. Add in the egg and extracts—vanilla, almond, and lemon. Mix on medium speed until combined.
  4. In a separate bowl, whisk together the all-purpose flour, salt, and baking soda. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the candied fruits and pecans, ensuring even distribution throughout the dough.
  6. Scoop heaping amounts of dough onto the baking sheet, spacing them 3-4 inches apart. Aim for about 12-15 dough mounds.
  7. Bake for 20-25 minutes until edges are golden brown and centers are slightly soft.
  8. Let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
