Ingredients
  

For the Noodles
  • 12 ounces Pappardelle Pasta Fettuccine or linguine can be used if unavailable.
For the Sauce
  • 1 pound Italian Sausage Use mild or hot depending on heat preference.
  • 1 Onion Yellow or white preferred for sweetness.
  • 3 cloves Garlic Fresh garlic enhances overall flavor.
  • 2 cups Bell Peppers Mix red, yellow, and green for vibrancy.
  • 28 ounces Crushed Tomatoes Can use whole tomatoes crushed by hand.
  • 1 cup Dry White Wine Pinot Grigio or Sauvignon Blanc recommended.
  • 1 handful Fresh Basil Fresh herbs preferred for best flavor.
  • 1 handful Fresh Parsley Fresh herbs preferred for best flavor.
  • 1 teaspoon Crushed Red Pepper Flakes Adjust to your spice preference.
For Cooking
  • 2 tablespoons Olive Oil Can be replaced with vegetable oil.
  • to taste Salt Vital for seasoning.
  • to taste Black Pepper Vital for seasoning.

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil, add pappardelle pasta, and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add Italian sausage, break apart, and cook until browned and crumbly, about 5-7 minutes. Transfer to a plate, leaving drippings in the skillet.
  3. In the same skillet, add more olive oil if needed, add diced onions and bell peppers. Sauté for about 5 minutes until tender. Add minced garlic and crushed red pepper flakes, stirring for another 1-2 minutes until fragrant.
  4. Pour in a splash of dry white wine to deglaze the skillet, scraping browned bits. Allow to simmer and reduce for about 2-3 minutes.
  5. Stir in crushed tomatoes, browned sausage, and a pinch of salt and black pepper. Simmer uncovered for 8-10 minutes.
  6. Add cooked pappardelle pasta to the skillet. Toss gently to coat pasta in sauce. Stir in freshly chopped basil and parsley, adjusting seasoning as necessary.
  7. Plate with a sprinkle of freshly grated Parmesan cheese on top and serve immediately.

Notes
