Step-by-Step Instructions
  1. Marinate the Chicken: Combine chicken pieces with garlic, ginger, soy sauce, and brown sugar in a bowl. Season with salt, pepper, and thyme. Marinate for at least 1 hour, ideally overnight.
  2. Brown the Chicken: Heat vegetable oil in a pot. Add marinated chicken pieces and sear for 5-7 minutes on each side until golden brown.
  3. Sauté Aromatics: Remove chicken and add onions, bell peppers, and tomatoes to the pot. Stir for about 5 minutes until softened.
  4. Add Liquid: Return chicken to the pot, add chicken broth and Scotch bonnet pepper. Bring to a simmer for 2 minutes.
  5. Braise the Chicken: Cover and cook on low heat for 1.5 to 2 hours, stirring occasionally until chicken is tender.
  6. Adjust Seasoning: Taste and adjust seasoning with salt, pepper, and brown sugar. Remove Scotch bonnet if desired.
