Step-by-Step Instructions for Japanese Clear Soup
  1. In a large 8-quart stock pot, heat 2 tablespoons of sesame oil over medium-high heat until it shimmers.
  2. Add one sliced sweet onion, three minced garlic cloves, one cup of chopped carrots, and a tablespoon of freshly grated ginger to the pot. Sauté for 5–7 minutes.
  3. Pour in 4 cups of chicken broth, 2 cups of beef broth, and 2 cups of water. Stir well and bring to a rolling boil.
  4. Reduce heat to a gentle simmer and cover the pot. Let the soup simmer for at least one hour.
