Cooking Steps
  1. Heat a large cast-iron skillet over medium heat. Add olive oil and warm for 1-2 minutes until shimmering.
  2. Add the sliced Kiolbassa roasted garlic sausage to the hot skillet. Sauté for 5-7 minutes until browned.
  3. Stir in minced garlic and sauté for an additional 1-2 minutes until fragrant.
  4. Reduce the heat slightly and pour in heavy cream and chicken broth. Add Italian seasoning and Parmesan cheese, whisking until bubbling and thickened.
  5. Add fresh spinach and sun-dried tomatoes, stirring to combine and simmering for 2-3 minutes.
  6. Toss in zucchini noodles and cook for an additional 2-3 minutes, gently coating them in the sauce.
  7. Season with salt and pepper as needed, then remove from heat.
