Step-by-Step Instructions
  1. In a mixing bowl, combine the cream cheese, granulated sugar, and vanilla. Beat until light and fluffy, about 3-4 minutes. Scoop out 20 tsp portions and freeze for 2 hours.
  2. In a medium saucepan, combine the fresh blueberries and granulated sugar. Cook over medium heat, stirring frequently, until blueberries burst and thicken, about 8-10 minutes. Cool completely and refrigerate.
  3. In a large bowl, whisk together flour, baking powder, baking soda, and salt. In a separate bowl, cream together butter, granulated sugar, and lemon zest until fluffy, about 4-5 minutes. Add egg and vanilla, mixing until combined.
  4. Fold the dry ingredients into the wet mixture until combined. Gently fold in the chilled blueberry jam.
  5. Portion out the dough into balls, flatten slightly, place a cheesecake disc in the center, and enclose it. Roll in granulated sugar and place on a parchment-lined baking sheet.
  6. Preheat the oven to 350°F (175°C). Bake the cookies for 11-12 minutes until the edges are golden. Cool on the baking sheet for 10 minutes before transferring.
