- In a mixing bowl, combine the cream cheese, granulated sugar, and vanilla. Beat until light and fluffy, about 3-4 minutes. Scoop out 20 tsp portions and freeze for 2 hours.
- In a medium saucepan, combine the fresh blueberries and granulated sugar. Cook over medium heat, stirring frequently, until blueberries burst and thicken, about 8-10 minutes. Cool completely and refrigerate.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt. In a separate bowl, cream together butter, granulated sugar, and lemon zest until fluffy, about 4-5 minutes. Add egg and vanilla, mixing until combined.
- Fold the dry ingredients into the wet mixture until combined. Gently fold in the chilled blueberry jam.
- Portion out the dough into balls, flatten slightly, place a cheesecake disc in the center, and enclose it. Roll in granulated sugar and place on a parchment-lined baking sheet.
