Cooking Steps
- Pat the cod fillets dry with a paper towel and season both sides with salt and pepper. Set aside.
- Heat olive oil in a large skillet over medium-high heat and add cod fillets. Cook for 2–3 minutes until golden-brown, then flip and cook for another 2–3 minutes until slightly undercooked. Remove from skillet.
- Lower heat and melt butter in the same skillet, then add minced garlic and sauté for 30 seconds until fragrant.
- Stir in lemon juice and zest into the buttery garlic mixture and let simmer for 1 minute.
- Return the cod fillets to the skillet and spoon sauce over them. Simmer for an additional 2–3 minutes until fish flakes easily.
- Garnish with parsley and serve immediately.
