Step-by-Step Instructions
  1. Preheat your oven to 350°F (177°C) and line an 8-inch square baking pan with parchment paper.

  3. Add the vanilla extract, all-purpose flour, baking powder, salt, and old-fashioned oats. Mix until crumbly.
  4. Press approximately two-thirds of the crumbly crust mixture firmly into the prepared baking pan.
  5. Bake the crust for 12 minutes until lightly golden.
  6. Whisk together sweetened condensed milk, lemon juice, and lemon zest until smooth.
  7. Pour the lemon filling over the hot crust and sprinkle the remaining crumble mixture on top.
  8. Bake for an additional 22-25 minutes until the edges are golden brown and the center is set.
  9. Allow the bars to cool in the pan for about 30 minutes before lifting them out to cool completely before slicing.
