Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 4–5 minutes until translucent. Stir in minced garlic for 30 seconds, then add ground beef, cooking until browned (7–9 minutes). Drain excess fat and season with paprika, oregano, salt, and pepper.
  3. In a mixing bowl, whisk together Greek yogurt, light sour cream, and cornstarch until smooth and creamy. Set aside.
  4. Layer half of the sliced potatoes evenly in the greased baking dish. Spoon half of the beef mixture onto the potatoes, then half of the creamy yogurt mixture, and half of the cheddar cheese on top.
  5. Add the remaining sliced potatoes on top of the beef layer, followed by the rest of the beef mixture, remaining cream mixture, and a final sprinkle of cheddar cheese.
  6. Carefully pour beef broth around the edges of the baking dish. Avoid pouring it on top to maintain the layers.
  7. Cover the baking dish tightly with aluminum foil and bake for 45 minutes.
  8. Remove the foil and continue baking for an additional 15–20 minutes, until cheese is golden and bubbly.
  9. Allow the dish to rest for 10 minutes before slicing. Garnish with fresh parsley before serving.
