Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat a drizzle of oil over medium-high heat and sauté the frozen cauliflower rice for 5–7 minutes until browned. Transfer to a greased casserole dish.
  3. In the same skillet, add ground beef, chopped bell pepper, and diced onion. Cook over medium heat for about 7-10 minutes until the meat is browned.
  4. Stir in taco seasoning, tomato paste, and water. Cook for an additional 3–5 minutes until the liquid is absorbed.
  5. Spread the seasoned beef mixture over the cauliflower rice in the casserole dish and top with shredded cheese.
  6. Bake for 10-15 minutes until the cheese is melted and bubbling.
  7. Remove from oven, spread sour cream on top, and add desired toppings before serving.
