Preparation Steps

- In the same skillet, add ground beef, chopped bell pepper, and diced onion. Cook over medium heat for about 7-10 minutes until the meat is browned.
- Stir in taco seasoning, tomato paste, and water. Cook for an additional 3–5 minutes until the liquid is absorbed.
- Spread the seasoned beef mixture over the cauliflower rice in the casserole dish and top with shredded cheese.
- Bake for 10-15 minutes until the cheese is melted and bubbling.
- Remove from oven, spread sour cream on top, and add desired toppings before serving.
