Ingredients
  

Batter
  • 2 cups Flour wholemeal or gluten-free can be used
  • 1.5 tsp Baking Powder can replace with baking soda if measured carefully
  • 0.5 tsp Baking Soda can replace with more baking powder if needed
  • 0.5 tsp Salt omit if using salty ingredients
  • 1 large Egg or flax egg for vegan alternative
  • 1 cup Milk non-dairy milk works too
  • 0.25 cup Sour Cream/Yogurt buttermilk can be used
  • 0.25 cup Vegetable Oil any neutral oil is fine
  • 1 clove Garlic minced, can omit for milder flavor
  • 2 cups Cheddar Cheese or any flavorful cheese
  • 75 g Feta Cheese or goat cheese
  • 0.5 cup Green Olives black olives can also be used
  • 0.5 cup Sun-Dried Tomatoes fresh tomatoes can be used
  • 0.5 cup Roasted Peppers fresh bell peppers can be used
  • 0.5 cup Green Onions or shallots/chives
  • Butter/Oil Spray for greasing muffin tin

Method
 

Baking Steps
  1. Preheat your oven to 180°C (350°F) or 160°C (320°F) for fan ovens and grease a 12-hole muffin tin.
  2. In a large bowl, whisk the flour, baking powder, baking soda, and salt together until combined.
  3. In another bowl, whisk the egg, milk, sour cream, vegetable oil, and minced garlic until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently about 8 times until combined.
  5. Fold in the cheddar cheese, feta cheese, green olives, sun-dried tomatoes, roasted peppers, and green onions.
  6. Spoon the batter into the prepared muffin tin, filling each cavity slightly above the rim.
  7. Bake for about 25 minutes until golden brown and a toothpick inserted comes out clean.
  8. Let muffins cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
