Cooking Steps
- Heat the oil in a large skillet over medium-high heat until shimmering. Reduce heat to medium.
- Add diced Yukon gold potatoes to the skillet and sauté for about 5-6 minutes until golden brown but still firm.
- Push the cooked potatoes to one side, add ground beef, chopped yellow onion, and diced red bell pepper. Season with salt and pepper, cooking until the beef is browned and vegetables are softened.
- Mix in diced green chiles, chili powder, ground cumin, smoked paprika, and garlic powder. Cook for another 2 minutes.
- Stir everything together and continue to cook until potatoes are tender and fully cooked, about 6-8 more minutes.
- Top with shredded cheese, cover, and cook on low heat for 2-3 minutes until cheese is melted and bubbly.
- Remove from heat, garnish with cilantro, and serve hot.
