Ingredients
  

For the Base
  • 2 tablespoons avocado oil substitute with olive oil if preferred
  • 2 cups diced Yukon gold potatoes you don’t need to peel them
  • 1 pound lean ground beef opt for 90/10 or leaner
  • 1 medium yellow onion or white/sweet onions
  • 1 medium red bell pepper feel free to swap with green or other colored peppers
For Seasoning
  • 1 teaspoon kosher salt adjust to taste
  • 1 teaspoon black pepper adjust to taste
  • 1 can diced green chiles 4-ounce can
  • 1 tablespoon chili powder adjust for heat tolerance
  • 1 teaspoon ground cumin a key player in this dish
  • 1 teaspoon smoked paprika or regular paprika
  • 1 teaspoon garlic powder fresh garlic can also be used
For Garnishing and Flavor
  • 1 cup shredded cheese cheddar, colby jack, monterey jack, or pepper jack
  • optional cilantro for garnish

Method
 

Cooking Steps
  1. Heat the oil in a large skillet over medium-high heat until shimmering. Reduce heat to medium.
  2. Add diced Yukon gold potatoes to the skillet and sauté for about 5-6 minutes until golden brown but still firm.
  3. Push the cooked potatoes to one side, add ground beef, chopped yellow onion, and diced red bell pepper. Season with salt and pepper, cooking until the beef is browned and vegetables are softened.
  4. Mix in diced green chiles, chili powder, ground cumin, smoked paprika, and garlic powder. Cook for another 2 minutes.
  5. Stir everything together and continue to cook until potatoes are tender and fully cooked, about 6-8 more minutes.
  6. Top with shredded cheese, cover, and cook on low heat for 2-3 minutes until cheese is melted and bubbly.
  7. Remove from heat, garnish with cilantro, and serve hot.
